Here’s the thing, I’m pretty sure no one has had a coastal South Indian dish and thought, “let’s make this into a Mac & Cheese.” But this is why you’re here and I exist. At least this is my assumption.
I am not here to show you how to cook the food that is considered traditional, you have many respected Indian writers, cooks and chefs to teach you that. I’m here to represent the immigrant cooks, to channel those authentic flavors into something utterly different. Sometimes easy, sometimes complicated. Today, the steps themselves are easy, though a little time consuming, but the meal will taste complex. I was going to write about the word, “curry,” and my complete distaste for almost every opinion about it. (Everyone is wrong! Probably me too!) But I will have many more opportunities to be polarizing. There will be more newsletters, and this one is already lengthy.
